When the
Spaniards entered New Mexico in 1598, they brought with them a pungent,
hardy vegetable that was the foundation of their distinctive cuisine- the
green chile. Today, chiles are the base for the entire Mexican food
industry.
Fiesta Canning Company is one of the largest processors of chile produ cts
in the U.S., producing 8-10 million pounds a year in a state-of-the-art
facility surrounded by hundreds of acres of chiles. The moment that the
trucks of glistening
green chiles arrive from the
fields, they are sorted to
quality standards and then shot through fire-roasting jets at an Even
